Lentil Almond Veggie Burgers

Veggie burgers are an easy meal to whip up when in a pinch. Lentils are easy to prepare at the last minute because they don’t require soaking overnight. Lentils are high in fibre and protein and contain iron, manganese (for the knees) and folate (B9). The almond butter in these veggie burgers adds a nice taste and texture. The recipe makes about 6-8 small burgers (extras can be frozen or put in the fridge for a few days). To make this meal balanced, it can be deliciously paired with avocado, tomato, sautéed onions (or raw). It can be served with a sprouted bun, sweet potato fries, and a salad. I like adding some sauerkraut for an extra boost of healthy gut bacteria! And the burger would be incomplete without a side of sweet potato fries!

  • 1 cup cooked lentils
  • 1/2 cup almond butter
  • 1 cup grated sweet potato
  • 1 chopped onion
  • 2 cloves garlic minced
  • 1/4 cup spelt or brown rice flour
  • 2 tbsp. tamari
  • 1 tsp. cumin or other spice of choice

How to Make

  • Pre heat oven to 350 degrees
  • Mix all ingredients together in a bowl
  • Form 2 inch by inch patties
  • Put parchment paper on a baking tray and put burgers on
  • Bake for 30 minutes flipping once mid-way
