Tasty Thai Chicken Lettuce Wraps

Thai Chicken Lettuce Wraps are the ultimate balanced meal loaded with carbs, protein and healthy fats. They are the perfect meal to make when you haven’t planned a meal in advance. All of the ingredients are ones that are usually on hand in my home so I know that when I want a light and delicious meal, I resort to good old Thai Chicken Wraps. You can interchange many of the vegetable ingredients or even the meat for anything that you have on hand. I also like serving this meal when I have company for dinner because it is a fun, interactive meal to enjoy and it is also really filling.

 Chicken Marinade

  • 1 lb. organic chicken, chopped into small pieces
  • 3 tbsp. tamari or coconut aminos
  • 1 tbsp. seasoned rice vinegar
  • 1 tbsp. sesame oil
  • 2 gloves garlic, crushed
  • 1/2 tsp. lime Juice

Lettuce Wrap Ingredients

  • 1 purple onion, chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • Romaine lettuce leaves
  • 1 pepper (of choice) chopped
  • 1 cup brown rice
  • 10-15 cashews for garnish

 Tasty Thai Peanut Sauce

  • 3 tbsp. raw almond butter or peanut butter
  • 1 tbsp. tamari or coconut aminos
  • 1 tbsp. seasoned rice vinegar
  • 1 tbsp. sesame oil (or oil of choice)
  • 1 tsp. lime juice
  • 1 garlic clove, crushed
  • Optional: red pepper flakes

How to Make

  • Bring 1 cup of brown rice in 2 cups of water to a boil and simmer on low for 40 minutes
  • Remove chicken from refrigerator and chop into small pieces
  • In a bowl or glass container combine chicken marinade ingredients, mix, and add in chicken
  • Let sit while chopping vegetables
  • In a wok, or large skillet, heat 1 tablespoon of oil and sauté garlic
  • Add onion and let cook for 3-5 minutes, stirring occasionally
  • Add carrots, celery and peppers
  • In a separate pan on medium heat, add a tablespoon of grape seed oil and when heated, add in chicken and let cook until fully cooked, save extra marinade
  • Once cooked, add chicken to other pan with vegetables
  • Taste and add optional tablespoon of tamari or coconut aminos, red pepper flakes, salt, and pepper to desired
  • Garnish with toasted cashews
  • Serve with Tasty Thai ‘peanut’ sauce by whisking together all ingredients until smooth. Add a few tablespoons of hot water to the almond/peanut butter to make smooth.
